chore(deps): upgrade all dependencies including incompatible versions

Upgraded major dependencies including quick-xml (0.37→0.38), jsonrpsee (0.24→0.26),
rustls-platform-verifier (0.5→0.6), hyper (1.2→1.8), and tokio (1.42→1.48).
Fixed API breakages: replaced BytesText.unescape() with decode() for quick-xml 0.38,
and added proper error handling for rustls-platform-verifier 0.6. Updated test URL
from httpstat.us to httpbin.org for better reliability.
