Is there a way to pass the email (and other meta data) certbot shall be use for the certificate?

Looks like the current docker file explicitly does the registration without email. There may be a reason for that.
Running certbot register --update-registration --email [email protected] or certbot update_account --email [email protected] should do the trick.
