By everything else I mean all the settings, rc files (e.g., colorrc), action-history, etc.

Current ~/Library/Application Support/GIMP/2.10
SCR-20231023-qqox

Original ~/Library/Application Support/GIMP/2.10
SCR-20231023-qqll

I would like to keep as much as possible intact. Although I am most familiar with Photoshop, the reason I want go back to the default interface is because every time I look up how to do something, I'm getting keyboard shortcuts, settings dialogs, etc. that are not available in the PhotoGIMP interface.

You can rename/delete the menurc file (while GIMP is not running). Afterwards GIMP should restore the original shortcuts.

Same for other files.

Thanks. By 'other files', do you mean the other '…rc' files?

colorrc
contextrc
controllerrc
devicerc
dockrc
gimprc
gtkrc
parasiterc
pluginrc
profilerc
sessionrc
templaterc
themerc
toolrc
unitrc
