Of course I could use bash for the installation process, but it isn't the declarative "nix" way.

A nixpkgs would be cool. Something like pkgs.gimp.photoGimp.

I haven't contributed to nixpkgs, but if I find time I will try it.

This project is just config file, so you can use home-manager install it to your home.

if you want to make it system-wide, looks like must overlays the original GIMP package to change system config path.

edit: I try to install it, but /nix path is not writeable, so GIMP cant't read config, do not use nix to install it may be better choice.
