First of all, amazing work with this mod. Love it.
So in general I think the gold standard for downtime in DnD games is to provide your players with a number of downtime days, which they can then spend like a currency to perform tasks. These could be crafting or training etc.
What I think would really add some quality of life to this add-on would be if there was a field we could fill in at the top of the downtime tab that was just a counter for the number of downtime days you have to spend. Then, a DM could make a world level downtime activity, such as learning a skill, and set it to require 100 downtime days to complete. In order to complete it, it would verify that you have at least the minimum number of downtime days available to spend (from the field mentioned above) and then just subtract it. If you don't, it gives an error message.
