Update default hub image and test notebooks

The notebooks work with https://github.com/developmentseed/veda-optimized-data-delivery-image, but it would be best to use the default Hub image from https://github.com/NASA-IMPACT/pangeo-notebook-veda-image for the workshop.

Acceptance criteria:

1. Finish and merge Add icechunk / virtualizarr pangeo-notebook-veda-image#42
2. Test that the notebooks work on the VEDA hub
