Although an official Jekyll build container would be great, it appears the official one is no longer maintained as of 2 years ago:
https://github.com/envygeeks/jekyll-docker

However, a 3rd party one exists that might be easier than starting from scratch:
https://github.com/JV-conseil/jekyll-docker#readme
