Install `i18n` module and implement `en` structure

Describe the feature

Aim for this issue is to install the Nuxt i18n Module which will allow us to tackle different languages in the future. Right now we need to implement the en language across the whole app so we can tackle strings in an easier way.

I imagine this issue will be a little big so please open a draft PR so we can chime in whenever this is tackled
