Refactor Uniffi bindings to make them closer to Pyo3 Bindings

Current uniffi bindings are slightly different when compared to current PyO3 bindings.

We need to refactor them a bit to look closer to the current APIs:

• Complete configuration struct
• Return of completion handler when calling network APIs
• Expose identity configuration to foreign language
• Add support for configuration file
