I would like to see support for the creation of neoforged and quilt added in intellj.

architectury-plugin need to be update to support Neoforge from 1.21 onward.

Is there an alternative plugin to support Neoforge & Fabric?

I'd recommend using the Architectury template generator to generate projects instead of the IntelliJ plugin. The Gradle plugins handles NeoForge fine when the project is created.
