Is it possible to configure the path of the IIIF Image API 2 endpoint to something else than /iiif/2?

Unfortunately it's a constant in the code and it would be challenging to change it.

Yes, but the approach would change depending on if we adopt Spring Boot or not.

In Spring boot it's as easy as:

    # in cantaloupe.properties
    cantaloup.v2.prefix=/api/v2
