Include Copyright information in the NuGet feed

At present it isn't obvious what the copyright is from the NuGet feed. The MIT licence declaration and Authors setting aren't sufficient and although a LICENCE file contains a Copyright, that isn't easily discoverable programmatically from the nuget package.
It should be fairly simple to include a Copyright setting in the coverlet.collector.csproj (etc).

Coverlet packages rely on NuGet package metadata, which includes license information. Version details are already provided.

That is just the License type. It doesn't include the specific Copyright information. The MIT License requires a copy of the terms of the MIT License and also a copyright notice to be included when the software is included. We can't add that copyright notice because it is missing from the package.
You would typically add:
<copyright>(c) 2018 tonerdo</copyright>
