Problem

Hard coded python_versions in workflow files

Proposed solution

Remove them to use the default in release-script

@bobleesj let's re-cookiecut pdffit2. This ensures it has the latest workflows and will close this issue, but also that it is 100% updated with everything.

Double check - when re-package, ensure pre-commit passes in the beginning
