How should I investigate?
I'm recording the response time here, doesn't it seem like all the time? How should I record response time?
Should I investigate the time consumption of all middleware?

Do you know how to use dotnet-counters to view the asp.net core8 that I am running on Docker? I currently want to upgrade to ASP.net Core 10 and give it a try

dotnet-counters needs access to the process, so it's same host. That means you would have to run it inside the docker container.

dotnet-monitor is another tool, that could be used here, and can be run as sidecar to your container.
Or you "publish" the metrics, then a metric collector like OTel (open telemetry) can be used (e.g. to export it to Grafana Mimir / Prometheus). It just sound like lots of work, but actually it's quite straight-forward once you jumped in.
