animations don't render in book

the hvplot animations don't seem to render when the book is built. the only place these are included is showing different satellite footprints in time series and impact on coverage here. probably take them out and include small multiples of a few representative time steps?

+1 This would be the easiest to avoid inconsistencies between rendered and interactive versions. There are definitely some hvplot bugs when plots are exported to HTML (see related discussion here xarray-contrib/xarray-tutorial#268)
