Support for HTTP status code interception

First of all, thank you for kgateway and this great project.

We are currently evaluating kgateway as an ingress-nginx replacement and have not found a way to intercept HTTP status codes. This corresponds to the ingress-nginx annotations

annotations:
  nginx.ingress.kubernetes.io/custom-http-errors: "501,502,503"
  nginx.ingress.kubernetes.io/default-backend: error-pages-svc

That means in detail

• if upstream status code is in "501,502,503"
• then replace status code to a self choosen value
• and send a custom output or the contents of another upstream to downstream

Is there a way to replicate this behavior? Have I missed something?
