chore(deps): Bump jsonwebtoken and fastify-jwt in /letsencrypt

Removes [jsonwebtoken](https://github.com/auth0/node-jsonwebtoken). It's no longer used after updating ancestor dependency [fastify-jwt](https://github.com/fastify/fastify-jwt). These dependencies need to be updated together.


Removes `jsonwebtoken`

Updates `fastify-jwt` from 1.2.1 to 4.2.0
