Version OpenAPI schemas

Current Behavior

Presently openAPI schemas are not getting versioned like other schemas, and also lack single version extension. We are tracking schemas of some constructs in .json format and some in .yml format. They should have same extension for consistency.

Environment

• Host OS: Mac Linux Windows
• Platform: Docker or Kubernetes
• Meshery Server Version: stable-v
• Meshery Client Version: stable-v
