Realtime Preview model deprecation

The repository has hardcoded the model gpt-4o-realtime-preview-2024-10-01, but OpenAI announced it will be deprecated on September 10th, 2025.

The newest model is gpt-4o-realtime-preview-2025-06-03, and we should have a way to set it ourselves in the method:

RealtimeClient.connect(): Promise<true>
