"I’m familiar with attaching a single compute server to an assignment. Is there a way to ‘attach’ say 2 or 3? I’m trying to give an assignment to students where they have the option of choosing between say 3 compute servers."
WORKAROUND: make multiple assignments or handouts, which have each of the configurations.
You would click "Create" for the compute servers for all 3 handouts, and then the students have the compute servers in their project and can provision and start the one of their choice. There's only a charge to you when the server is provisioned.

I am strongly in favour of keeping the current "implementation" in the sense of using this workaround. The user interface both for instructors and for students will get more complicated and in most cases it will just get in the way instead of helping to solve a problem.
Using the same server for multiple assignments, on the other hand, seems to have a much wider area of application and, of course, that's what the current design fully supports.
