Technically speaking I'm unsure how some apps pull it off but a perfect example that comes to mind is KODI, it's been implemented for a quite long time, but essentially one can enable external display mode and it allows one to utilize the full resolution and aspect ratio of the target external display. Granted in KODI it turns the device screen into a gesture based touchpad, but If external monitor support at aspect and ratio could be enabled in UTM it would be huge!
