Version 27.0 had some (breaking?) changes regarding "conversational search" as well as total_values (in facet_stats). Are these things that impact our projects?

If not, then I don't see any issue in bumping the default.

We'll have to see about upgrading Typesense in all the clusters, but only after we're sure all the codebases support 28 or higher.
