Based on the ChatGPT UX, I expected that editing the prompt in the Assistant pane and pressing Ctrl+Enter would send it again to the model, but instead Zed sends an empty prompt.
Steps to trigger the problem:
In an assistant pane, send a prompt to the model
Edit the prompt. The fact that this is possible suggests you should be able to send it again.
Press Ctrl+Enter.

The edited prompt should be sent to the model. Ideally there would be a slider control to navigate among versions of the prompt and responses (a la ChatGPT). Alternatively, the prompt could be made read-only once sent.
