Help migrate 2020 recipes into 2023

I don't recall what was the discussion around this, but we have 3 versions of Java in 2023, we have java/11, java/17, java/21. Are there exceptions to the rule java/* => java/17 ?

rstudio-server needs java 11, that's the only thing that comes to mind.
