Some fixes and better superset integration

Hi @Stefen-Taime, I have found this repo very helpful. It has allowed me to understand the practical uses of using DBT with Iceberg and Trino. But I found a couple of issues related to the latest version of Trino and setting up Superset. I have implemented the following:

• Latest version of Trino requires the fs.hadoop.enabled property to be set in datalake.properties.
• I followed the instructions for setting up Superset but want not able to connect to Trino as the Trino package is not installed in the Superset base image. I have added a docker image to add Trino and also to run the setup commands. Superset is also now included in the docker compose image.

Let me know what you think and if you would prefer that I implement something differently.
