This is mostly moving over notebooks that don't really make sense to keep in the base epipredict docs but that are (potentially) worth keeping around. Companion to cmu-delphi/epipredict#431
It also updates the renv to have R at 4.4.1 to match several other repos. I installed some packages to be able to get it to build.
