Change compose YAML file references in manuals to use the
compose.yaml
filename.That is the canonical name since compose 2, https://docs.docker.com/compose/intro/compose-application-model/#the-compose-file
There are more of the same across the docs tree, but changing just manuals first here to keep the PR size at bay.
