Document Sofar select entities

Proposed change

Adds select entities for two writable inverter settings the
sofar-modbus library already exposes: charger use mode (8 options:
self use, time of use, timing, passive, peak cut, off-grid, generator,
feed-in priority) and EPS mode (3 options). Both are only served on a
hybrid inverter, matching the library's own applies_to gating.
