Relates to stackabletech/stackable-cockpit#310

As we already bumped the stack and demo manifests before the 24.11 release in #116, we should at least use the dev versions, so that the demos are not completely broken.

This avoids the need for the users to run stackablectl release in dev && stackablectl demo in trino-taxi-data --skip-release
